Pecan Pie Cheesecake

Ingredients:

For the Crust:

1 and 1/2 cups graham cracker crumbs

5 tbsp salted butter, melted

2 tbsp granulated sugar

 

For the Cheesecake:

16 ounces full fat cream cheese, at room temp use the kind that comes in blocks

One 14 ounce can Eagle Brand Sweetened Condensed Milk

1/2 cup + 2 tbsp granulated or cane sugar

3 large eggs, at room temp

1 cup sour cream, at room temp

 

For the Pecan Pie Topping:

1/2 cup salted butter 8 tbsp, 1 stick, or 113 grams

1 cup brown sugar, packed

1/2 cup heavy cream

3/4 tsp cinnamon or a pinch more, to taste

1/8 tsp salt or more, to taste

1/2 tsp vanilla extract

2 and 1/2 cups pecans
