Cake:

3/4 cup olive oil

1 1/2 cup sugar

3 eggs

1 tsp vanilla

Juice of 1 lemon

2 1/2 cups flour

2 1/4 tsp baking powder

1/2 tsp salt

1 1/2 cups buttermilk

 

Filling:

2 8 oz packages of cream cheese, softened

1 14oz can Eagle Brand® Sweetened Condensed Milk

Juice and zest of 1 lemon

 

Frosting:

2 sticks butter, softened

3 cups  powdered sugar

2 tbsp heavy cream

1/2 tsp vanilla

Light blue food color

 

Speckles:

1 tsp cocoa powder

2 tsp vanilla
