8 cups Colby or Monterey Jack cheese, shredded 

20-24 each (8-10 inch) flour tortillas, cut in half 

1 each whole rotisserie chicken, meat removed and chopped   

Optional toppings: salsa, scallions, avocado slices, and sour cream
